Sheet Pan Salmon with Roasted Asparagus and Lemon

Hey there! Are you looking for a super easy and healthy dinner that tastes amazing? This sheet pan salmon recipe is a lifesaver on busy nights. It’s so simple, you just toss everything onto one pan and let the oven do the work. Plus, it’s packed with good stuff for you!

Ingredients Needed

  • One pound salmon fillet, skin on or off, your choice
  • One pound asparagus, tough ends snapped off
  • Two tablespoons olive oil
  • One teaspoon garlic powder
  • Half a teaspoon salt
  • Quarter teaspoon black pepper
  • One lemon, half sliced thin, half for squeezing

Step By Step Making

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). This is a good hot temperature for roasting.
  2. Get a large baking sheet ready. You can line it with parchment paper if you want to make cleanup even easier.
  3. Place the salmon fillet on one side of the baking sheet.
  4. In a small bowl, mix together the olive oil, garlic powder, salt, and pepper.
  5. Brush this olive oil mixture all over the salmon. Make sure it’s coated well.
  6. Arrange the asparagus on the other side of the baking sheet next to the salmon.
  7. Drizzle a little more olive oil over the asparagus and toss them to coat. Season them with a pinch more salt and pepper if you like.
  8. Lay the thin lemon slices over the top of the salmon fillet. This will give it a lovely flavor as it cooks.
  9. Now, put the baking sheet into the preheated oven.
  10. Roast for about 12 to 15 minutes. The cooking time can change depending on how thick your salmon is and how you like it cooked.
  11. The salmon should be cooked through and flake easily with a fork. The asparagus should be tender but still a little crisp.
  12. Once it’s done, carefully take the baking sheet out of the oven.
  13. Squeeze the juice from the remaining lemon half over the salmon and asparagus right before serving.
  14. Serve it up right away! It’s perfect on its own or with a side of rice or quinoa. This is way easier than our Sunrise Scramble Bowls which are great for breakfast but we are talking dinner here!
