This simple dish is not only quick to make but also incredibly satisfying, keeping you full and energized for hours.

Ingredients Needed

  • 1 block (14-16 ounces) firm or extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil or avocado oil
  • 1/2 medium onion, finely chopped
  • 1 bell pepper (any color), chopped
  • 1 cup spinach, fresh
  • 1/4 teaspoon turmeric powder (for color)
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: Nutritional yeast for a cheesy flavor
  • Optional: Black salt (kala namak) for an eggy flavor

Step By Step Making

  1. Press the tofu to remove excess water. Crumble it into bite-sized pieces using your hands or a fork.
  2. Heat the olive oil in a non-stick skillet over medium heat.
  3. Add the chopped onion and bell pepper. Sauté until softened, about 5-7 minutes.
  4. Add the crumbled tofu to the skillet.
  5. Sprinkle in the turmeric powder, garlic powder, salt, and pepper. If using, add nutritional yeast and black salt now.
  6. Stir everything together, breaking up any large clumps of tofu. Cook for about 8-10 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
  7. In the last minute of cooking, stir in the fresh spinach until it wilts.
  8. Serve hot.
