Hearty Beef Stew with Root Vegetables

A Warm and Comforting Dinner

When the evening calls for something truly satisfying and warming, a hearty beef stew is the perfect answer. This recipe is packed with tender chunks of beef and flavorful root vegetables, simmered in a rich, savory broth. It’s a classic for a reason, offering a delicious and filling meal that’s ideal for any night of the week, especially when you need a comforting dish to bring everyone together.

Ingredients Needed

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 pound small potatoes, quartered
  • 1 pound parsnips, peeled and chopped
  • 4 cups beef broth
  • 1 cup dry red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons all-purpose flour (for thickening, optional)
  • 1/4 cup water (if using flour)

Step By Step Making

  1. Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
  2. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the beef in batches, searing all sides. Remove the beef from the pot and set aside.
  3. Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until softened, about 5-7 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Stir in the tomato paste and cook for 1 minute.
  6. If using red wine, pour it into the pot and scrape up any browned bits from the bottom. Let it simmer for a couple of minutes to reduce slightly.
  7. Return the browned beef to the pot. Add the beef broth, potatoes, parsnips, thyme, and rosemary. Stir everything together.
  8. Bring the stew to a simmer, then reduce the heat to low, cover, and cook for at least 1.5 to 2 hours, or until the beef is very tender.
  9. If you prefer a thicker stew, in a small bowl, whisk together the flour and water to make a slurry. Stir this slurry into the simmering stew and cook for another 5-10 minutes until thickened.
  10. Taste and adjust seasoning with salt and pepper as needed.
  11. Serve hot and enjoy this deeply flavorful meal.
